Some treats lately + a recipe!


I have been on a baking craze lately.  I can't seem to get enough or stop myself.  Good thing there are plenty of people willing to help eat it or else someone would eventually probably find me lying on the floor in a sugar coma.

Lemon-blueberry muffins. mm-mm.

Strawberry cake.  Who cares if it's pink and I took it to the Super Bowl party? One word: scrumptious.

Banana-Apple muffins.  These are divine, friends.  Moist, tasty, and just about everything you could ever hope for in a muffin is all bundled into one nice little package.  And the best part?  Gluten free, sugar free, dairy free.  Score!

Want the recipe?  Well here ya have it.

*2c gluten free rice blend flour (I use this one.  scroll to the bottom of the page and that's the blend I make.)
*1 1/2t xanthum gum
*1t baking soda
*1/4t salt
*1t ground cinnamon
*1/2t ground nutmeg
*1/8t ground ginger 
*1/2c unsweetened applesauce
*3/4c grade B maple syrup
*2 eggs, beaten (you can also use 4 egg whites to lower cholesterol)
*3 overripe bananas, mashed

1.  Preheat the oven to 350.  Grease muffin pan(s).
2.  In a large bowl, whisk together dry ingredients.  In a separate bowl, combine applesauce, syrup, eggs and bananas.  Stir well.  Add to the flour mixture and stir until just moistened.  
3.  Bake in prepared muffin pans for 15-18 minutes.
4.  Enjoy!

*yields about 18 regular size muffins.
